The most favorite snack on the everyday and festive table is, of course, salted fish. For a true lover of delicious food, the search for fresh, fatty and truly lightly salted fish turns into torture. It is oversalted, then with a stench, then the fish looks unappetizing, then the price is clearly overpriced. I propose the simplest recipe, thanks to which you will always have fish on your table - mackerel or herring, beautiful, appetizing and lightly salted.
It is necessary
herring or mackerel - only 3 pieces; salt, sugar; onion peel; liquid smoke; pan; 1 liter of water; plastic two-liter bottle
Instructions
Step 1
Clean the entrails from the fish, remove the head and tail. Boil 1 liter of water, add 3 tablespoons of salt, 2 tablespoons of sugar, a handful of onion husks and boil for 5 minutes. Cool the brine, add 100 ml of liquid smoke.
Step 2
Cut off the neck of the plastic bottle.
Step 3
Put the fish in a bottle in a checkerboard pattern: head - tail - head, pour with brine, leave for 1 day.
After draining the brine, transfer the fish to a bag and place in the refrigerator for 2 hours. The fish is ready!
Step 4
From salted fish, you can cook kippers. Extend the ridge by cutting the fish in half without cutting through the skin. Brush with vegetable oil, grated garlic, sprinkle with coarsely ground black and red pepper, ground coriander, ginger and cumin.
