The faster the freezing speed, the less damage to the eggs, therefore, with a large amount of product and a small refrigerator volume, it is recommended to put containers into the chamber gradually. You need to defrost caviar in the air in a natural way, and not in warm water or in a microwave oven.
The standard temperature for freezing and storage is - 18 ° C, but if possible, it is better to reduce this figure to - 20 ° C. Even if all conditions are met, caviar is stored in the freezer without losing its taste and nutritional properties for about 10 months.
