Is it possible to freeze caviar
Red caviar, even after the freezing process, retains its useful properties. At the same time, its color, smell and taste remain unchanged.

Secrets of freezing and thawing a delicacy
In order for the product not to lose its original characteristics even during long-term storage, you need to know the nuances of its freezing:
- You can avoid sticking eggs by adding a little glycine to the jar. Food containers and glass containers are best suited for storing delicacies.
- You can freeze caviar for a maximum of a year, so it is important to sign the date of placement in the freezer.
- If caviar needs to be stored for more than 12 months, an antiseptic should be added to the container with the product. For this purpose, you can use sorbic acid.
- Do not freeze the product multiple times. If there is a lot of caviar, it is worth dividing it into portions and distributing it into containers.
The process of defrosting the product is no less important, since if you make a mistake at this stage, you can get an incomprehensible sticky mass.
Immediately after removing from the freezer, the product must be left on the lower shelf of the refrigerator for 10-12 hours. Then the delicacy is placed for an hour in conditions with higher temperature indicators. The final stage - red caviar is finally thawed at room temperature.
Of course, if there is no time for such a long process, you can also carry out accelerated defrosting. The caviar is removed from the freezer and left in a warm room. However, it must be borne in mind that in this case the product may become liquid and unusable.
