In the summer heat, light refreshing dishes are very relevant, which do not require the hostess to stand for a long time at the stove. Okroshka cooked on yogurt is the best for lunch on a sultry day.

It is necessary

    • For okroshka:
    • 1 liter of yogurt;
    • 1 liter of mineral or boiled water;
    • 4-5 medium cucumbers;
    • 500 g of boiled meat;
    • 1 bunch of green onions;
    • 1 bunch of dill;
    • 1 bunch of cilantro;
    • 3-4 sprigs of basil;
    • salt.
    • For yogurt:
    • 1 liter of milk;
    • 2 tbsp leaven.

Step 1

Matsoni is a fermented milk product widespread in the Caucasus. It is made from boiled milk with the addition of sourdough, the basis of which is Bulgarian bacillus and lactic acid streptococci. Matsoni can also be made at home, but the starter culture containing the necessary microflora must be purchased at a store or market.

Step 2

Boil milk, preferably high fat, in a saucepan, cool to 45-50 ° C. It can be determined without a thermometer by dropping the little finger into the milk: the tip of the finger should pinch slightly.

Step 3

Pour 100-150 ml of milk into a separate bowl, add the starter culture, stir thoroughly until a homogeneous structure is obtained, and make sure that there are no lumps left in the mass. Then add the mixture to the remaining milk and stir again. Wrap the dishes with yogurt and put them in a warm place for 8-10 hours, and after this time, put them in the refrigerator for 4-5 hours.

Step 4

To prepare okroshka, boil the meat (veal, chicken, turkey, etc.) and cut it into strips. Beef tongue or liver can also be used, but do not substitute sausage for meat.

Step 5

Rinse fresh cucumbers in running water, peel and chop into small cubes or strips. You can grate them on a coarse grater.

Step 6

Then rinse the herbs thoroughly, pat dry with a towel. First of all, chop the green onions, sprinkle with salt to taste and mash a little with a spoon or pestle to give juice. Chop the dill, cilantro and basil finely, toss with the onions and cucumbers.

Step 7

Dilute the yogurt with cold mineral water or boiled water and beat a little. Then add a pinch of sugar and stir until it is completely dissolved. Add cucumbers with herbs to the yogurt and refrigerate for a while.

Step 8

When serving, arrange the meat on the plates and add the yogurt, cucumber and greens filling to it. Fresh white bread or lavash is suitable for such okroshka.
