At the bottom of the pan, you need to pour a centimeter layer of salt, on which we spread the washed caviar. We fill it with salt on top, which is 10-15 percent of the mass of caviar.
Step 3
Close the saucepan with a lid and place in a dark, cool place for 5 days. After the end of this time, take out the caviar and rinse it with boiled water to remove salt residues. Moreover, during salting, you need to drain the salting brine that stands out.
Step 4
Ready-made caviar can be rolled into sterilized jars, which should be stored in a cool place.
