Step 1
As a rule, it is very difficult to buy fresh pink salmon; more often it is sold frozen. If the pink salmon was bought with a carcass, then first it must be cleaned: cut off the head and tail, separate from the bones, pull out the insides. It is better to take a ready-made sirloin part, it will come out slightly more expensive, but not much.
Step 2
It is better not to remove the skin immediately, otherwise the fish will be very salty. It is better not to cut the sirloin, but to salt it whole. Pour salt into an enamel saucepan on the bottom so that the bottom is covered. Put 5-6 black peppercorns and bay leaves there.
Step 3
"Brush" the pink salmon fillet with salt and put in a saucepan, sprinkle with salt, pepper and bay leaves on top. Put it all in the refrigerator or on the balcony.
Step 4
After a day, the fish will give juice and will already be salted well enough for eating. We take out the pink salmon and cut it into slices 1-1.5 centimeters wide. Further, everyone's imagination will fly: it will be a sandwich with butter, slicing or decoration for another dish.
