Ingredients:

  • Beef (better to take on the bone) - 300-400 g;
  • Pearl barley - 180-200 g;
  • 1 carrot and 1 onion;
  • 5 medium-sized potatoes;
  • 2 pickled cucumbers;
  • Sunflower oil;
  • Condiments and herbs;
  • Sour cream for dressing.

Preparation:

  1. Let's start by making the broth. To do this, put thoroughly washed meat in a pot of water. Then it is put on a strong fire. When the liquid boils, the fire decreases and the broth is cooked for 1.5-2 hours. Remember to remove the foam.
  2. While the meat is boiling, you need to prepare the cereal. It needs to be sorted out and rinsed thoroughly. After that, it is poured into a separate saucepan with water and boiled. When the barley is half cooked (after boiling, it will take about 8 minutes), it should be removed from the heat and the liquid should be drained.
  3. Vegetables, or rather carrots, potato tubers and onions, need to be peeled and rinsed thoroughly. After that, the potatoes should be cut into medium-sized cubes, and the onion should be finely chopped. Carrots are best chopped with a grater, or you can cut them into strips. The skin must also be removed from the cucumbers. Then they must be chopped using a grater.
  4. When the broth is ready, you need to take out the beef, and strain the liquid itself. Then salt to taste, pearl barley and potatoes are put in it, and the container is put on fire.
  5. Meanwhile, in a frying pan with the addition of vegetable oil, carrots and onions are fried over low heat until cooked. After that, the contents of the pan are sent to the pan.
  6. Cucumbers also need to be stewed over low heat in a pan, then the taste of pickle will be more intense. We also send them to broth.
  7. 5 minutes before readiness, spices are placed in the soup: lavrushka, peppercorns, dill, parsley. You can also pour one glass of brine from a jar of pickles and boil everything for 2-4 minutes.

The dish is ready. During serving, 1 large spoonful of sour cream can be added to each plate with fragrant pickle. It will also be simply excellent if you decorate the pickle with finely chopped parsley and dill.
