Step 1

Since meat is an irreplaceable product on our table, Stroganoff beef is loved not only by adults, but also by children and elderly people. This is because the tender meat of beef stroganoff is not only tasty, but also very easy to chew without straining your jaw. Choose the right fresh piece of beef correctly. It is good to buy beef tenderloin, lumbar, dorsal, or upper leg. Rinse a piece of meat and start cutting it. The hardness (softness) of the final product will depend on the correct cutting. The main rule here is to cut slices of meat across the fibers.

Step 2

Beat the plates cut up to 2 cm thick with a special grooved hammer to a thickness of 0.8 cm. If you cut a piece of meat with plates across the fibers correctly, then they are easily flattened literally before your eyes to the required thickness. Next, cut them into strips 1 cm wide and about 5 cm long.

Step 3

Melt the butter in a skillet. At this time, salt the meat cut into strips, pepper to taste and roll in sifted flour. Put the prepared meat in a preheated pan and, stirring constantly to avoid overheating, fry over high heat. Put the fried meat in a saucepan.

Step 4

Chop the peeled and washed onion and fry in the same pan as usual until golden brown. After that, pour a little broth or water into the pan, add sour cream with tomato paste, mix thoroughly.

Step 5

Put the resulting sauce in a saucepan for the meat, bring to a boil. Simmer on low heat, covered for 40 minutes. Add greens, stir and leave in the same dish with the heat off for a while. Any garnish for this meat dish can be prepared. Most often these are either mashed potatoes or french fries.
