Step 1

Take 300-400 grams of beef (tenderloin). Rinse thoroughly, pat dry with paper towel. Cut as follows: thin slices of meat along the grain. Beat each layer well with a meat hatchet. And then cut across the grain into slices about 3-5 centimeters wide.

Step 2

Prepare a saucepan, pour some wheat flour on the bottom. Put a layer of meat on the flour, sprinkle with a new portion of flour, put the meat layer again - and repeat this until all the meat is in the saucepan. Cover it with a lid and shake it well. Peel one medium onion and cut into half rings. So that the onion does not irritate the eyes, periodically substitute the knife under a stream of cold water. Heat a teaspoon of vegetable oil in a skillet over medium heat, add half rings of onion, saute until transparent and golden brown.

Step 3

Place the breaded pieces of meat in a separate skillet with a little vegetable oil. Grill over high heat for about 2-3 minutes. Add the meat to the sautéed onion skillet. Sprinkle with salt and pepper to taste and cook over high heat for a few minutes, stirring occasionally. Then reduce the heat, add 150 grams of sour cream to the meat and onions, boil for a couple of minutes.

Step 4

Dissolve one and a half tablespoons of tomato paste in half a glass of hot water, carefully pour into beef stroganoff. While stirring, simmer for about 3-3 minutes over low heat. Arrange on plates, sprinkle with dill or parsley. Serve with mashed potatoes or vegetable salad.
