Sauerkraut normalizes digestion and blood sugar levels, has a bactericidal and anti-inflammatory effect. You can cook various dishes from sauerkraut: it is stewed with meat and mushrooms, it is used as minced meat for roasting duck and piglet, cabbage soup is boiled.

Instructions
Step 1
Rinse the meat under running cold water, place in a saucepan, after chopping the bone in several places, pour three liters of cold water. Cover tightly, place over high heat and bring to a boil. Then reduce heat and skim off the foam with a slotted spoon. You can also remove the fat floating on the surface and use it later for frying the onions.
Step 2
An hour and a half after the start of cooking, salt the broth. When the meat is ready, remove it from the pan and put it in another bowl, strain the broth.
Step 3
Rinse the sauerkraut with cold water and squeeze well. Place in a soup pot, add one and a half cups of broth and some vegetable oil. Cover and simmer the cabbage, stirring occasionally.
Step 4
Peel and finely chop the onions and carrots. Pour vegetable oil into a frying pan or put the fat removed during the cooking of the broth and fry the vegetables in it with tomato paste for five minutes.
Step 5
An hour after the start of stewing the cabbage, add the rest of the broth to it (leaving half a glass for flour dressing), put the vegetables fried with tomato and continue to cook the cabbage soup for another thirty minutes.
Step 6
At this time, prepare the flour dressing. To do this, add flour to the pan and, stirring occasionally, fry over low heat until golden brown. Sift the toasted flour, put in a small saucepan and dilute with warm broth. Then bring to a boil and cook, stirring constantly, over low heat for five to ten minutes. Then strain through a sieve or colander.
Step 7
Salt the cabbage soup, put the peppercorns, bay leaf and pour in the flour dressing. Stir everything thoroughly and cook for another ten minutes until tender.
Step 8
Wash, dry and finely chop the herbs. Add it to the cabbage soup, let it brew for about fifteen minutes. Then pour into bowls, serve sour cream separately.

sauerkraut can be done in another way. Rinse the meat, place in a saucepan with sauerkraut, pour three liters of cold water and cook over medium heat.
Step 10
Fry the onions and carrots in vegetable oil along with the tomato paste for five to seven minutes. Fry the flour separately until golden brown.
Step 11
After an hour and a half from the beginning of cooking, put vegetables fried with tomato into the cabbage soup, add pepper, bay leaf and fried flour. Stir everything thoroughly and boil the cabbage soup for another thirty minutes until tender.
