Canning tomatoes is a way of harvesting vegetables that allows you to preserve the fruits for a long time. After all, if all the rules for pickling and pickling tomatoes are followed, then the blanks are stored for several months until the cans are opened.

If before canning the tomatoes and herbs / herbs were well washed, salt and spices were taken in the required proportions, and enough marinade was poured into the jar, then there should be no problems with the safety of the product. However, in case of non-compliance with the recipe or unauthorized change in the proportions of products, spoilage of blanks is a frequent occurrence. The brine can become cloudy and the tomatoes in jars can go bad for many other reasons.

Why the pickle with tomatoes grows cloudy and the cans explode

  1. Low-quality tomatoes were used. For canning, you should take vegetables without damage and rot, otherwise, with a high degree of probability, the workpieces will deteriorate in the near future.
  2. Poorly washed tomatoes and herbs were used.
  3. There was a lack of proper sterilization of cans and lids. In general, for salting any products, the cleanliness and sterility of the dishes is the primary factor, it most of all affects the safety of the workpieces.
  4. The cans were rolled up poorly. The fact is that when the cans are not sealed, air gets into them, which provokes the multiplication of bacteria.
  5. The recipe for canning tomatoes was not followed, for example, products were taken in smaller volumes or completely excluded.

What to do if the jars of tomatoes are swollen and the brine is cloudy

Before putting canned tomatoes for storage for the winter, you should first hold the blanks in "quarantine" in a cool place for 10 days. If after this time the brine in the jars remains transparent and the lids are not swollen, then the tomatoes can be removed to the basement or cellar for "wintering". If in some jars the marinade has become cloudy, then the following work should be carried out:

  • remove tomatoes from jars and rinse in saline solution (tablespoon per liter of water);
  • make a new brine or boil the old one for 5-7 minutes (the first is preferable);
  • rinse jars thoroughly, sterilize, and then fill them with vegetables and washed herbs;
  • pour boiling brine into jars and roll up with new sterilized lids.

Is it okay to eat tomatoes if the brine has become cloudy, the can "exploded"

Whether tomatoes from a cloudy brine are suitable for food or not depends on the time the vegetables are in the jar, the integrity of the fruits. If no more than 10 days have passed after seaming, the vegetables have not cracked, then you can eat them, you just need to rinse the fruits in clean water first.
