To prepare quail baked with oranges and rosemary you will need:

- quail

- orange

- orange zest

- rosemary

- soy sauce

- olive oil

Wash the quail carcass well and dry with a paper towel. Prepare a marinade from the juice of one orange, 5 tablespoons of olive oil and half a glass of soy sauce. Place the quail in the marinade and refrigerate for 2 hours.

Cut two oranges into cubes, add rosemary and pepper mixture. Stuff the quail carcass with this mixture and let them stand for another 30 minutes.

To prepare the caramel sauce, pour the remaining marinade into a saucepan and add 3 tablespoons of sugar to it. Slowly evaporate the marinade over low heat, so that its amount is halved. Remember to stir the sauce constantly.

Preheat oven to 200 degrees. Put parchment paper and stuffed quail carcasses on a baking sheet. Grease each bird with caramel sauce and place in the oven for 30-40 minutes. To form a beautiful mirror glaze, grease the quail carcasses with sauce every 7 minutes.
