Ingredients:

  • Boiled beef - 250 g;
  • Fresh cucumber - 4 pcs;
  • Bread kvass - 700 ml;
  • Radish - 150 g;
  • Parsley and green onions - 1 bunch each;
  • Potatoes - 3 tubers;
  • Provencal mayonnaise - 70 g;
  • Sour cream - 70 g;
  • Mustard - ½ teaspoon;
  • Granulated sugar - ½ teaspoon;
  • Lemon juice;
  • Chicken eggs - 4 pcs;
  • Ground black pepper and salt.

Preparation:

  1. Boil chicken eggs hard-boiled, after cooking, put them in cold water with ice, hold for 2 minutes, and then peel and chop with medium strips.
  2. Wash the potatoes thoroughly, put in a saucepan, add water and boil in their uniform. After cooking, cool and chop into small cubes.
  3. Rinse the radishes thoroughly and crumble them into mugs.
  4. Wash all the cucumbers well, if you wish, you can peel them off and chop them into small pieces. Wash all the greens well under running water, then chop finely.
  5. The boiled beef must be cooled, then it can be cut into small cubes, strips or cubes.
  6. Chopped green onion feathers, hand mix with black pepper, granulated sugar and salt, combine all components with ready-made mustard, pour over everything with lemon juice.
  7. Put the prepared mustard mixture in a container with potatoes, radishes and boiled beef, mix.
  8. Pour all the bread kvass into the resulting mass, after which add chopped chicken eggs and fresh cucumbers to the okroshka. Stir the dish again thoroughly, then let it brew in the refrigerator for about 60 minutes.
  9. At this time, beat well mayonnaise and sour cream. Before serving, sprinkle okroshka with chopped herbs and add a mixture of sour cream and mayonnaise.
