To cook Burgundy beef, you need the following ingredients: 1 kg of beef (boneless), 300 g of bacon, 0.5 liters of Burgundy red wine, 50 ml of cognac, 2 leeks, a few small pickled onions, 2 carrots, 16-20 champignons or porcini mushrooms of medium size, 1 tbsp. wheat flour, 100-130 g of fatty bacon, 2 tbsp. olive oil (you can take odorless sunflower oil), 4 cloves of garlic, 2 tbsp. ghee, herbs (thyme, rosemary, leek, parsley), bay leaf, black ground pepper, salt, spices "Bouquet Garni".

Any red unsulphited wine, for example "Cabernet", is suitable for the dish.

Peel the onions and carrots and chop finely. Cut the bacon into short strips and fry in vegetable oil in a skillet over medium heat. Transfer the meat to a plate. Fry the onions and carrots until the onions are golden brown. Reduce heat and keep the pan on the stove for another 3-4 minutes. Then, transfer the onions and carrots to a separate bowl. Wash and cut the meat into small cubes (about 4x4 cm), roll in flour and sauté over medium heat in the same skillet for 5 minutes. Add previously roasted vegetables, cognac and wine. Stir with a spatula, keep on fire until the liquid remains in the amount of ¾ of the original volume.

Transfer the contents of the pan to a thick-walled saucepan, add the Bouquet Garni spices (onions and herbs), bring to a boil over low heat. Cover with a lid and place in an oven preheated to 160 ° C for 3 hours. Rinse, pat dry and cut into mushroom caps. Fry in a separate skillet in butter. Fry over medium heat until golden brown. Add chopped leeks and pickled onions. Remove the bay leaf and Garni Bouquet from the saucepan and discard. Add the sautéed bacon and mushrooms and onions. Salt, add dry spices, chopped garlic and stir.

Serve Burgundy beef with boiled potatoes or rice and fresh herbs.

French-style beef baked with potatoes cooks faster. You will need: 500 g of lean beef, 500 g of potatoes, 3 small onions, 300 g of hard cheese, 2 tbsp. mayonnaise, hot mustard, fat, salt. It is advisable to marinate the meat overnight. Cut its meat into not very thick slices, salt and pepper, spread with mustard and refrigerate. If you want to cook the dish faster, beat the pieces of beef with a hammer, season with spices to taste and start cooking.

Peel the potatoes, wash them, cut them into thin slices, salt to taste and mix with mayonnaise. The thickness of the potato slices should be approximately the same as the thickness of the meat slices. In this case, they will cook at the same time. Peel the onion, cut it into thin half rings. Grease a baking dish, lay out a layer of meat, onion on top, then potato slices. Sprinkle with grated cheese. Place the dish in the oven. Bake the meat for about an hour at 200 ° C.
