Step 1
Rinse the meat, remove bones, muscles, films. Cut the beef into cubes. Rinse and peel carrots, chop or grate on a coarse grater. Peel the onion, finely chop it into cubes. Peel and chop the garlic.
Step 2
Cut the smoked brisket into thin strips. Place the strips in a skillet and heat over medium heat. Mix the beef pieces with salt, pepper and flour. After the slices of smoked brisket have given up their fat, remove them from the pan. Place a portion of the meat in a pan, frying on all sides, remove and fry the next portion.
Step 3
Add vegetable oil to the skillet if necessary and saute the carrots. Then add the onion and garlic. Protome vegetables for 2-3 minutes, pour in cognac, mix everything. As soon as the cognac has evaporated, remove the food from the pan, transferring it to the rooster.
Step 4
Prepare a gauze bag with bay leaves, thyme, parsley, and pepper. Lower the knot on the thread into the rooster. Next, lay out and flatten the meat together with the brisket on the vegetables. Pour dry wine over the food.

Place the covered roaster in the oven. Cook for 3 hours at 160 degrees. After removing the meat from the oven, remove the bag of spices, put the dish on low heat.

Wash the champignons, cut off the caps, fry them in a pan with butter. Put the processed mushrooms with the meat. Also fry the pickled onion heads, simmer together with the total mass for several minutes. Serve Burgundy beef with boiled new potatoes.
