How to cook white cabbage in batter

For six servings you will need:

- three small heads of white cabbage;

- 1/2 cup cream;

- 50 ml of vegetable oil (you can take any refined oil);

- two chicken eggs;

- 5 tbsp. tablespoons of wheat flour;

- 500 ml of pure water;

- salt and pepper (to taste).

The first step is to remove two or three top leaves from the cabbage, rinse the cabbage well and cut it in half. After that, put a deep saucepan of water on high heat and bring the water to a boil, gently put cabbage in it, salt, reduce heat and blanch for 10-12 minutes. Then put the cabbage in a colander and leave it for 20 minutes, so that, firstly, the water glass, and secondly, the vegetables cool.

The next step is making batter. It is necessary to break two eggs into a deep bowl, beat them with a whisk or fork until foam forms, then add cream, flour, salt and pepper, beat everything again to get a homogeneous mass. The consistency of the batter should be of medium thickness.

The last stage is roasting. To do this, put the pan on fire, add vegetable oil to it and wait until it boils. Next, you need to take a piece of cabbage, dip it in the batter (so that the batter completely envelops the whole cabbage) and put it in the pan. Do the same with the rest of the cabbage. Fry the pieces over medium heat for a minute, then turn them over to the other side, close the pan with a lid and continue to fry for another two minutes. After a while, put the cabbage on a paper towel so that it absorbs the excess oil. Cabbage in batter is ready, now the pieces can be laid out in plates and served.
