Savoy cabbage, in comparison with white cabbage, is tastier and healthier. But it also has certain disadvantages - it is not subject to long-term storage and is completely unsuitable for pickling and canning. But from its delicate corrugated leaves you can make wonderful stuffed cabbage rolls.

- For minced meat:
- a head of savoy cabbage;
- bulb;
- 500 g ground beef;
- 40 g bread crumbs;
- carrot;
- 100 g of water or meat broth;
- 30 g ghee;
- spice
- salt.
- For the sauce:
- large carrot;
- 20 g ghee;
- 40 g tomato paste;
- bulb;
- a bunch of dill;
- salt and ground pepper.
- For gravy:
- garlic clove;
- 100 g heavy cream or sour cream:
- salt.
Instructions
Step 1
Disassemble the savoy cabbage into leaves. For this amount of minced meat, about 15 leaves are required.
Step 2
Pour water into a saucepan, salt and bring to a boil. Dip the cabbage leaves in boiling water and blanch them for no more than two minutes. This type of cooking will make them much softer. Place the leaves in a colander, pour cold water over them and let it drain. Cut off the nubs from the base of each leaf, or beat them off with a meat hammer.
Step 3
Cut the onion into small cubes and grate the carrots on a coarse grater. Spread the onion cubes in ghee until golden brown, then add the carrots to them and continue to fry until soft.
Step 4
Combine the ground beef with the onion-carrot mixture and bread crumbs. Add broth or water, mix everything. Place the filling in the middle of the cabbage leaf and wrap it in an envelope. Do the same for other leaves. If you can't wrap the cabbage rolls tightly enough, tie them up with cotton thread. Fry the cabbage rolls in oil on both sides.
Step 5
Make a sauce for stewing cabbage rolls. Finely chop the onion, grate the carrots and fry them in ghee. Place the carrots and onions in a stewing container and add the tomato paste. If the pasta is a little sour, you can adjust the taste with sugar.
Step 6
Place the cabbage rolls in layers in a saucepan. If they are not completely covered by it, add hot water. Season with salt and pepper. Simmer cabbage rolls for half an hour. Chop the dill finely and add it a minute before stewing is finished. Place the lid on the saucepan and let it sit for 5 minutes.
Step 7
Make a sauce for the cabbage rolls. Chop a garlic clove, you can also pass it through a press. Add sour cream or cream to it, salt and stir. Serve the cabbage rolls hot, sprinkled with sour cream and garlic sauce.
