Gourmets believe that the most delicious meat is located near the bones. And if it's also the ribs of a young lamb, even more so. There are several recipes for this delicacy.

- lamb ribs 1 kg;
- eggplant 1 pc;
- tomatoes 4 pcs;
- sweet pepper 1 pc;
- zira 30 g;
- coriander 1 tablespoon;
- head of garlic;
- white onion 3 pcs;
- red onion 1 pc;
- basil;
- cilantro;
- salt;
- pepper;
- vegetable oil.
Instructions
Step 1
Take a layer of lamb ribs and cut it into separate pieces. Remove the film and cartilage from them, rinse with warm water, dry a little. Take a frying pan, pour some vegetable oil into it and put it on fire. When the butter starts to boil, add the lamb. Do this very carefully so as not to burn yourself with the boiling oil. Fry until golden brown on all sides. Then remove them from the heat.
Step 2
Put the ribs prepared in this way in a container. Take cumin (herb is similar to dill, but has a completely different taste), coriander and chop thoroughly. Add the herb mixture to the ribs and season with salt and pepper to taste.
Step 3
Take a rooster or a cauldron, grease well with vegetable oil and put the onion, previously cut into half rings, on the bottom, and put the lamb with herbs on top.
Step 4
Wash and peel the eggplant and bell peppers and cut into small cubes. Cut the tomatoes into rings. Mix all ingredients and place on the ribs. Pass the garlic through the garlic press and spread over the vegetables. Season with salt and pepper.
Step 5
Preheat oven to about 180 degrees. Cover the roaster or cauldron with a lid and place in the oven. Simmer for about an hour.
Step 6
Serve in a deep bowl, sprinkle with chopped rings of red onion, cilantro and basil on top.
