Delicious homemade cake made according to an old Russian recipe. Previously, such crumbly gooseberry pies were baked in a frying pan in the oven. Now everything can be done easier and faster with a special baking dish and oven.
It is necessary
- - 150 g butter;
- - 150 g sour cream;
- - 4 things. chicken eggs;
- - 200 g vanilla sugar;
- - 250 g of premium flour;
- - 300 g of fresh gooseberries;
- - 100 g of chopped walnuts;
- - 1 PC. a bag of baking powder;
- - 10 g of icing sugar;
- - salt to taste.
Instructions
Step 1
Fresh gooseberries are best for making this cake. Take varieties with medium-sized berries. In them, the bones are softer and practically do not taste. If fresh berries are not available, gooseberry jam or jam can be used.
Step 2
Wash fresh gooseberries in lukewarm water. Do not make the water very warm, otherwise the berries may crack and sour. Go through the berries, remove the leaves and twigs, if any. Save a few whole berries for garnish. Using small nail scissors, carefully cut off the tails and stalks of the berries. Use a large gypsy needle or a sharp toothpick to make several punctures in each berry.
Step 3
Grind the walnuts with a ceramic mortar or coffee grinder. Melt the butter in a water bath. In a large blender bowl, beat the eggs until frothy. Continue adding sugar gradually. You should have a thick white foam.
Step 4
Pour the eggs into a deep bowl, add the baking powder and sift through the flour. Knead the dough, add the chopped walnuts to the almost finished dough and stir a little more. Add gooseberries to the dough. Stir very gently without crushing the berries.
Step 5
Grease a baking dish with some oil and place the dough in it. Bake at maximum temperature for forty minutes. Cool and remove from mold. Garnish with powdered sugar and fresh gooseberries before serving.
