Those who have been to Turkey have probably tried the national dish - borek (burekas, burek). The name "cheburek" comes from the Turkish word "burek". Börek is a savory pie with various fillings.

Step 1
There are three types of Turkish berek: pouf-berek (triangular shape), sous-berek (puff pastry), and cigar-berek (shaped like a Hawaiian cigar).
In Turkey, a borek is made from yufka puff pastry, which is thinner than papyrus paper. Berek filling can be cheese, meat, potatoes, vegetables.
Step 2
Since yufka can not be found everywhere, try to cook it yourself at home. Sift the flour. Sifting will remove the lumps and oxygenate the flour. Season with salt, vinegar, oil and water. Knead the dough. Leave it on for 30 minutes.
Step 3
In the meantime, prepare the filling. Mash cottage cheese or feta cheese with a fork, add an egg to glue. Finely chop the dill or green onions (whoever likes it). Use a paper towel to wipe off excess moisture from the greenery. Mix everything.
Step 4
Divide the dough into pieces. Roll each thinly into a circle. The dough will be very pliable, because vinegar and vegetable oil are added to it. Divide the round layer into triangular segments. Grease each triangle with butter. Place the filling on the base of the triangle and roll it like a cigar, remembering to roll it up on the sides (so that the filling does not fall out). Take a little toppings so that when rolling, you get "cigars" and not "barrels".

Pour a lot of vegetable oil into a saucepan and fry until tender.
