Place on 1 kg of meat 2 peeled carrots, 1 onion, a couple of leeks, a celery stick, bay leaf and a few thyme sprigs. In a special bag or strainer for spices, dip a few anise stars, a couple of cloves, 5-6 peppercorns into the broth. If you don't have a bag or strainer, just put the spices in the broth, but then don't forget to strain the broth. Cook the beef for about 2 hours, until the piece of meat is free to pierce with a knife. Beef should be covered with broth all the time, do not forget to add hot water.

Serve the boiled beef with sauce and vegetables. Such cold meat is well suited for vegetable salads, sandwiches on whole grain bread.

Sear small pieces of beef in olive oil until golden brown if you want to make a stew. Boil the chopped celery stalk and also the chopped carrots in a saucepan. When the carrots become pumpkin, the green beans and simmer for another 15-20 minutes until tender. To thicken the sauce, dissolve a tablespoon of cornstarch in ¼ cup water and add to the meat and vegetables. Warm everything together, stirring, for another 3-5 minutes.
