Rassolnik is considered one of the oldest dishes, which was prepared in Russia in the 17th century. This stew appeared long before the official appearance of liquid hot dishes. She quickly fell in love with ordinary peasants and gained popularity.
It is necessary

- - 2 potatoes;
- - 150 g of pearl barley;
- - 1 carrot;
- - a clove of garlic;
- - 3 pickled cucumbers;
- - spices to taste.

Step 1
Initially, the pickle was prepared exclusively from cucumber pickle with a small addition of pickled cucumbers. That is why this name has gone. The rest of the ingredients of this stew (carrots, pearl barley) were also simple and affordable. Such a dish has become a frequent guest on the tables of ordinary Russian peasants. It is worth noting that, like the hodgepodge, which at that time was often called a "hangover", the pickle was often used to relieve an alcoholic state and as a snack.
Step 2
To prepare the pickle, rinse the beef pulp thoroughly with cold water and cut into portions. Boil the meat in boiled water, salted to taste. The suggested amount of ingredients will require approximately three liters of liquid. Cook the broth for 40-60 minutes over low heat, covered with a lid. Do not forget: 10-12 minutes after the water boils, you need to descale.
Step 3
Pour 1 tablespoon of vegetable oil into a well-heated frying pan. Fry the finely chopped onion and chopped carrots on a medium grater for 5-7 minutes. Add seasonings and spices to taste. As a rule, when preparing pickle, chopped parsley and dried basil are often added. You can also add some garlic.
Step 4
After the beef broth is ready, add the pearl barley. Cook for 10-15 minutes. Peel and dice the potatoes. Chop the pickled cucumbers. Add grilled vegetables, cucumbers and potatoes to the broth. Cover the pot with a lid. Boil the pickle for 15-20 minutes.
Step 5
Pour the pickle into portioned plates. Garnish each dish with fresh herbs. It is also customary to serve sour cream on the table along with the first course. Pickle is especially tasty if you eat it with rye bread and bacon.
