Mushroom soup is great for those who are fasting. At the same time, it is quite nutritious due to mushrooms, which, in their energy and nutritional value, perfectly replace meat, not inferior in taste.

There are many different recipes for making mushroom soup. Pearl barley, carrots and potatoes can be found as ingredients in this dish. Mushroom soup is easy to prepare, and most importantly, you can use any edible mushroom. It all depends on personal taste preferences.

Today, many interpretations of mushroom soup, borrowed in other countries, have appeared. Among other things, cream soup, which came to us from France, is very popular. Its preparation differs from the usual one in that all the ingredients are ground in a blender. After that, a certain amount of cream is added to the cream soup. By the way, this dish goes well with shrimp.

Place the mushrooms in a small enamel pot, add salt and water. Bring them to a boil and simmer over medium heat for 20-30 minutes. If you are not using champignons to prepare this soup, then drain the water and repeat the procedure again. Also fill them with 1.5 liters of cold water and salt. Boil the broth for 20 minutes over medium heat.

Step 5

Peel and finely chop the carrots and onions. Fry vegetables in a pan with olive (sunflower) oil over low heat until tender.

Step 6

Peel the potatoes and cut into cubes. Dip it in broth and cook for 15-20 minutes. Then add roast vegetables and spices to taste into the broth. Cover the soup with a lid and simmer for 10-15 minutes.

Step 7

Pour the finished soup into portioned deep bowls. Garnish the dish with fresh chopped herbs.
