Step 1

Boil until cooked sushi mesh - glutinous rice for sushi and rolls. Place plastic wrap on the makisu bamboo mat and place a sheet of nori seaweed, matte side up, halfway down. Wet your hands in lemon water. Take the rice with wet fingers and form a "sausage", gently touching it tightly.

Step 2

Place the sushi meshes on the nori sheet. Gently spread the rice from the middle to the outside over the surface of the nori sheet. You should have an even layer of sushi mesh on the seaweed sheet. In this case, 1 cm of the edge farthest from you should remain without rice. Using a thin knife, spread the tobiko (flying fish roe) over the rice. Press it firmly.

Cover the sheet with a piece of bamboo rug and flip over. Now the sushi meshi rice is on the mat and the nori leaf is on top. Cut the crab meat into slices. Peel and cut the avocado into thin slices.

Step 4

Pour Japanese soy mayonnaise along the center of the nori sheet along the long side. You can also add some wasabi horseradish to taste. Spread crab meat on top, several slices of fresh avocado. In California rolls, you can add fresh cucumber, cut into thin strips.

Lift the edge of the bamboo mat closest to you a little. Grab the mat by the edge, along with some of the nori left without rice, and roll the roll in the opposite direction from you, gently pressing down on the filling. It should completely cover the green algae leaf.
