This dish will take time to prepare, but the results will be worth it. You will also need chicken and vegetables, and peanut butter is also added to the dish. The rich nut flavor and light lemon sourness make this chicken special.
It is necessary
- - 1 chicken (1 kg);
- - 3 tbsp. spoons of peanut butter;
- - 500 ml of chicken broth;
- - 3 onions;
- - 4 ripe red tomatoes;
- - 1 sweet red pepper;
- - 1 leek;
- - 3 carrots;
- - 1 tuber of cassava (or potato);
- - 2 lemons;
- - 100 ml of vegetable oil (preferably peanut oil);
- - salt and black pepper to taste.
Instructions
Step 1
Wash the chicken and divide into 4 portions. Cut each piece into 2 more or less equal pieces.
Step 2
Peel 3 onions and chop them as small as possible. Wash 4 red tomatoes and cut into 8 equal pieces. Cut the red peppers and leeks into approximately the same 1 cm thick pieces. Also, peel 3 carrots and 1 cassava and cut them into even 1 cm thick pieces.
Step 3
Pour 100 ml vegetable oil into a saucepan, add onion and fry over medium heat until soft. This will take about 10 minutes.
Step 4
Place chicken pieces in a saucepan with vegetables and fry over medium heat for 15 minutes.
Step 5
Once the chicken is well browned, add the tomato slices and stir with a wooden spoon.
Step 6
Pour half of the chicken stock (250 ml) into a saucepan and bring to a boil.
Step 7
Add chopped vegetables - cassava, carrots, bell peppers and leeks. Stir with the same wooden spoon.
Step 8
Season with salt and black pepper to taste, keeping in mind that the sauce will take a long time to cook, the excess liquid will evaporate and the flavors will concentrate.
Step 9
Simmer over low heat for about 1 hour, stirring frequently to prevent the stew from sticking to the bottom. Add more broth if necessary.
Step 10
Juice 2 lemons. Then, in a small bowl, combine the peanut butter, leftover chicken stock, and lemon juice.
Step 11
Add this mixture to the chicken pot. Bring stew to a boil and cook for another 5 minutes.
Step 12
Place the hot chicken with vegetables on a platter and pour the sauce in which it was cooked.
