The oldest recipe for pancakes with sour cream is considered. To prepare this dish, you must have the following ingredients in the kitchen: 300 g of thick sour cream, 1 glass of water or milk, 1, 5 glasses of flour, 2-3 eggs, 2 tablespoons of sugar, ½ teaspoon of salt, ½ teaspoon of baking soda, 50- 100 g of vegetable oil.
First you need to beat the eggs with sugar and salt with a whisk or mixer. Grind sour cream and soda separately. Then beat the prepared egg mixture with sour cream. Then add flour. The resulting thick dough is diluted with water or milk until it is thin enough to pour out of a ladle or spoon. It is better to cover the dough and let it stand on the table for an hour. Then add oil and mix thoroughly.
In a dry frying pan (preferably cast iron), you need to preheat the vegetable oil and only then start frying the pancakes. Pancakes are fried over a fire slightly above average on both sides. One minute on each side until dry. Then the pancakes are baked evenly. During the cooking process, it is important not to pour out the vegetable oil, but to grease the pan with it. You can use a cooking brush for this.
While frying pancakes, the dough must be stirred periodically, then its consistency will remain uniform. Ready-made pancakes are best stacked on a plate. To keep them soft, each pancake can be greased with butter, and then cover the entire stack with a lid.
