To cook pancakes with sour cream according to all traditions, you need three things - a good frying pan, high-quality vegetable oil and the right dough recipe. The pan should be either cast iron or modern and with a non-stick ceramic coating. The oil for frying must be preheated in a frying pan and only then put the pancakes on it - otherwise they will have a weak roast and an unappetizing pale appearance. You can prepare the dough for traditional pancakes with or without eggs - so that the dough is more fluffy.

For the preparation of fluffy pancakes, it is recommended to use not yeast, but ordinary kefir, which is more useful.

You can also add various natural ingredients to the dough that are not provided for in the recipe - for example, grated vegetables or fruits (zucchini, apples, and so on). Also, real Russian pancakes can be prepared using cottage cheese and other suitable products. A prerequisite for the tradition of the dish is the consistency and type of dough - it should be liquid and rich. You need to put it in the pan using a spoon, which is pre-moistened in cold water - this way the dough will not stick. Before serving, hot sour cream pancakes should be laid out on a napkin to remove excess fat from them.

To prepare traditional Russian pancakes in sour cream, take 100 g of flour, 0.5 cups of sour cream, 2 eggs, 3 tbsp. sugar, ¼ tsp soda and ½ tsp. salt. Break the eggs into a small bowl and beat them thoroughly with a fork or mixer, then add sour cream to the resulting mixture and mix thoroughly until a homogeneous mass is obtained. Then, in a separate bowl, mix flour with sugar, soda and salt, pour the egg-sour cream mixture into them and mix the contents of the bowl thoroughly until you get a liquid dough.

To give sour cream pancakes a spicy sourness, you can add a small amount of any berries with a sour or sweet-sour taste to the dough.

Pour vegetable oil into the pan and heat it as hot as possible, then moisten a tablespoon in cold water and begin to gently spread the pancakes on the hot surface of the pan. Roast the pancakes for two minutes on each side. Serve the finished dish with honey, sour cream or your favorite jam, as well as with fresh berries that will decorate the pancakes and make them even tastier and healthier.

If you wish, you can cook pancakes with apples - for this, dilute 25 g of yeast in 2 glasses of warm milk, add 2 eggs, 1 tbsp. sugar, 0.5 tsp. salt, mix everything and add 0.5 kg of flour to the mixture. Cover the dough with a towel, wait until fermentation, then cut the apples into thin slices and mix them with the dough that has come up. After that, pour the finished dough into the pan, frying the pancakes on both sides - if desired, the apple circles can be placed on top of the fried pancakes. Sprinkle the finished dish with granulated sugar and serve.
