Step 1

To make a mousse cake, you need regular sour cream from the store. The fat content of sour cream is needed from 15 to 25%. It is desirable that the taste of sour cream be without acidity, although if you plan to add fruit syrup, then the acidity is not of fundamental importance. Transfer the sour cream to a deep bowl, mix with powdered sugar and beat with a mixer for 5-10 minutes. If you want a vanilla dessert, add vanillin along with the powdered sugar.

Now you need to prepare the agar agar. This substance is obtained from algae, so agar-agar dishes are suitable for vegetarians. If agar-agar is in powder form, you just need to dissolve it in milk, put on fire, bring to a boil and cook, stirring occasionally, for 5 minutes. If agar-agar is in the form of flakes, then they must first be soaked in milk, left for 20 minutes, then bring to a boil and cook for 1 minute. Agar-agar in

flakes will take a little more than powder agar. The prepared thickener must be introduced into the sour cream mass. To do this, resume the whipping process and, without stopping whipping, add a mixture of milk and agar-agar in a thin stream. At the same stage, you can add fruit syrup if desired.
