The process of making pancakes in Russia was a real mystery. The pancakes themselves were cooked secretly from prying eyes, even relatives were not allowed to watch the process. A real Russian pancake should have turned out to be plump, light and spongy. Yeast pancakes were considered especially favorite. By the way, yeast pancakes are not as difficult to prepare as they seem. The main thing is to arm yourself with a proven recipe.
It is necessary
4 cups milk 4 cups flour 25 g yeast 0.5 cups melted butter 2 eggs 0.5 cups 25% cream salt to taste 1 cup sugar
Instructions
Step 1
Dissolve yeast in 1 glass of milk, filter through cheesecloth. Then add a teaspoon of sugar and ghee.
Step 2
We put it in a warm place, for example, near the stove. We are waiting for 15-20 minutes for the yeast to begin to foam. Then pour into a larger container, where the dough will fit, and add the remaining milk and about 1-1.5 cups of flour, i.e. just enough to keep the dough thin.
Step 3
We mix everything thoroughly and let it rise by a quarter, a little more is possible. At this time, we separate the whites from the yolks. Beat the yolks with sugar until whiteness and add to the dough. Add enough flour in portions so that the dough is pancake, i.e. like liquid sour cream.
Step 4
Add sugar and salt to taste. If pancakes are to be used with salty filling, it is recommended to rub a medium onion into the dough. Mix everything thoroughly. Leave the dough to rise to half, for about 30 minutes.
Step 5
Beat the whites tightly, add to the dough and knead gently. Whisk the cream tightly and also add to the dough. Everything can be baked in a preheated pan greased with vegetable oil.
