Wheat-rye bread with kefir is a healthy and tasty bread. Kefir, which contains beneficial bacteria and yeast, has many health benefits. It is often used to make bread and other baked goods.

- - 1 cup rye flour

To prepare the dough in a mixer bowl, combine wheat and rye flour, add yeast and stir for a minute or two. Then add kefir, warm water, salt and continue stirring with your hands for 5 minutes. Let the dough rest for 10 minutes and knead again for another 5 minutes.

Place the dough on a floured work surface and knead for a few minutes. Shape the dough into a ball, place in a bowl, cover with plastic wrap and let rise for 1-1½ hours.

After the time has elapsed, when the dough rises in volume by 2 times, transfer it back to the work surface, knead thoroughly and shape it into the desired shape. Sprinkle flour over the dough, cover and let rise for another 30 minutes.

While the dough is resting, heat the oven to 200C. Using a sharp knife, make a longitudinal cut in the dough as shown in the photo and place it in a baking dish.
Step 5
Place a bowl of water on the bottom of the oven. This will provide the moisture needed and the bread will have a thick, crispy crust. Lower the oven temperature to 180 ° C and bake for 40 minutes.
