Kefir bread is much tastier and healthier than store-bought bread. Such bread, in combination with honey, turns out to be very airy, tender and with a ruddy crust.
It is necessary
- - 30 g fresh yeast
- - 150 ml of cold water
- - 200 g of kefir
- - 170 ml of water
- - 1 tablespoon honey
- - 2 teaspoons of salt
- - 750 g flour
- - olive oil
Instructions
Step 1
Take a large bowl and pour cold water into it. Next, add fresh yeast there and wait until it is completely dissolved.
Step 2
Now take another bowl and mix kefir and water in it. Then add honey and salt to this mass.
Step 3
Pour flour into mixer bowl, then slowly add water and yeast mixture. After that, gradually pour in the mass with kefir.
Step 4
Mix thoroughly with a mixer on slow speed for 10 minutes.
Step 5
Cover the resulting dough with plastic wrap and let rise at room temperature for 3-4 hours. After this time, lightly knead the dough and cover again. Refrigerate for another day. The dough should "rest" well.
Step 6
Remove the dough from the refrigerator and let it sit at room temperature for a few hours. Flour the work surface. Start kneading the dough and form an oval out of it. Spread olive oil over the dough and sprinkle liberally with flour, cover and let rise in half.
Step 7
Preheat oven to 200oC and bake for 45-60 minutes.

It is best served warm with butter or jam. By the way, delicious toasts and croutons are made from such kefir bread.
