Condensed milk: what to choose

Condensed milk itself is a delicious and nutritious product. It retains most of the health benefits of whole milk. That is, it is a source of calcium, animal protein and a number of trace elements.

At the same time, due to the high sugar content, the calorie content of this product is very high. Therefore, you need to eat it in moderation - for example, adding it to tea or coffee. Pastries with condensed milk in the composition should also not be included in the diet very often.

To get the maximum benefit and minimum harm from condensed milk, you should pay attention to the following:

  • Structure. High-quality condensed milk consists only of natural cow's milk and sugar. No preservatives, flavors or "substitutes"!
  • A good product cannot be too cheap. Don't skimp when choosing ingredients for homemade baking. You will still gain in price compared to buying the culinary product from the store.
  • High quality boiled condensed milk is even more difficult to find. Therefore, it is better to cook it at home from "ordinary" condensed milk. To do this, a closed tin can is boiled in a saucepan with water for one and a half to two hours. In this case, the water level should overlap the jar by a couple of centimeters.

It is impossible to open the resulting "boiled pot" hot - be sure to wait until it cools!

Roll with condensed milk "Banana"

Sweet rolls with filling are sold in every cookery. Do you want a more interesting option?

Ingredients:

  • condensed milk - 1 can
  • flour - 5-6 tbsp. spoons
  • egg - 1 pc.
  • butter - 100 g
  • baking powder for dough - 0.5 tsp
  • banana - 1 pc.

The fruit for the roll should be chosen in a straight shape so that it is conveniently wrapped in the dough.

Cooking step by step:

  1. Beat the egg and half a can of condensed milk with a whisk or mixer.
  2. Pour flour, baking powder immediately into it, mix well.
  3. Pour the dough onto a baking sheet (it is better to cover the bottom with special paper). Bake for about a quarter of an hour at 180 degrees.
  4. To obtain the cream, use a mixer to "scroll" the rest of the condensed milk with butter.
  5. When the cake is baked, let it cool slightly (so you don't burn yourself). Smear the cream on it, not bringing it a centimeter or two to the edges.
  6. Peel the banana, put on the edge of the crust and wrap the roll.

Hold the finished dessert for about an hour in a cool place to soak.

Puffs of ready-made dough with condensed milk

If a puff pastry package and a can of condensed milk are "on duty" in the refrigerator, then the desire to pamper yourself with delicious food will not take you by surprise. A minimum of effort - and an amazing dessert on the table!

Required products:

  • puff pastry - 500 g
  • boiled condensed milk - 1 can
  • egg - 1 pc.
  • sugar - 2 tbsp. spoons
  • walnut kernels - 1 glass

If there were no nuts in the house, it doesn't matter. But with them the taste will be richer.

Cooking like this:

  1. Defrost the dough completely beforehand.
  2. Grind the nuts with a crush or in a blender, but not too finely. Mix with boiled condensed milk.
  3. Unroll the dough and roll it out a little (up to 3-4 mm in thickness). Cut into 8-10 cm squares.
  4. Put the filling on half of the square, cover with the free edge of the dough. Pinch tightly and gently.
  5. Bake on a thinly greased baking sheet at 180 degrees. As soon as a golden crust appears (usually after 20-25 minutes) - done!

Serve lukewarm or completely cooled.

Sponge cake in a slow cooker

A recipe for a multicooker, which, however, can be embodied in an oven.

Ingredients:

  • eggs - 2 pcs.
  • condensed milk - 1 can
  • flour - 1 glass.
  • cocoa powder - 2 tbsp. spoons
  • soda - 1 tsp

How to make the dough:

  1. Beat eggs.
  2. Mix with condensed milk and soda (extinguish it beforehand).
  3. Pour flour little by little, do not stop stirring.
  4. Pour in cocoa. Stir until our batter is even in color and consistency.
  5. Grease the multicooker bowl with a thin layer of butter. Pour in the dough and cook according to the Baking program for one hour.

The cake should not be taken out of the mold immediately after the end of the program, it is worth waiting for a quarter of an hour. The edges of the dessert will come away from the bowl, and then it can be removed without damage.

The finished biscuit can be poured with melted dark chocolate, soaked in cream, garnished with berries or pieces of fruit.

Cake "Black Prince"

A classic cake, a favorite back in the USSR. Has several options, including condensed milk.

The step-by-step recipe may seem long - but it's actually not difficult.

For the test you need:

  • flour - 1, 5 cups
  • condensed milk - half a can
  • eggs - 2 pcs.
  • sugar - 1 glass
  • sour cream - 1 glass
  • cocoa powder - 1.5 tablespoon

You will also need 1 teaspoon of baking soda, vinegar to quench it, and 1 tablespoon of starch.

For the cream:

  • condensed milk - half a can
  • butter - 300 g
  • cocoa - 2 tbsp. spoons
  • shelled walnuts - 0.5 cups

For fondant:

  • butter - 3 tbsp. spoons
  • milk - 3 tbsp. spoons
  • cocoa - 3 tbsp. spoons
  • sugar - 6 tbsp. spoons

We create in stages. First - the cakes:

  1. Stir the eggs and sugar thoroughly with a whisk / mixer until the crystals disperse.
  2. Pour in condensed milk, stir.
  3. Sprinkle cocoa and starch with flour and add to the liquid components. Slaked soda followed by flour.
  4. Knead the dough thoroughly. Divide it in three. Roll each part with a rolling pin into layers of the same shape.
  5. Bake the cakes at 180 degrees for about 15 minutes. Cool under a napkin.

Making a cream:

  1. Keep the oil warm to soften the product
  2. Grind it together with cocoa powder and condensed milk. Beat.
  3. Crush the walnut and add to the cream, stir.

Cooking fondant:

  1. Heat the milk until hot, so as not to boil. Remove from stove.
  2. Stir with cocoa and sugar.
  3. Add oil.
  4. Put the mixture on low heat and heat, stirring occasionally. When it boils, take it off.

Assembling the cake:

  1. Place the cake on a platter, cover with half of the cream.
  2. Put another cake on top, coat with the rest of the cream.
  3. Pour fondant over the top cake and edges.

Sometimes the cake is decorated with a sprinkle of powdered sugar and crushed walnuts.

Put the ready-made "Black Prince" in the cold. It is better if the sweet product stands for at least 6 hours before serving - so the cakes are better saturated.

Anthill cake

Ultra popular dessert with condensed milk. According to one recipe, you can make a cake, or you can make individual cakes.

Ingredients:

  • flour - 3.5 cups
  • condensed milk (preferably boiled) - 1 can
  • sugar - 0.5 cups
  • sour cream - 200 g or one "thin" glass
  • margarine - 1 pack (200 g)
  • butter - 1 pack (200 g)

You also need soda (0.5 tsp) or baking powder for the dough.

Make the dough according to the scheme:

  1. Sift flour.
  2. Cut the margarine into cubes (if the pack is just from the refrigerator, then use a coarse grater). The crushed product will quickly become soft.
  3. Mix it with flour, sugar and sour cream. Knead the crumbly dough by hand.
  4. Make a "sausage" and pass through a meat grinder with a large wire rack.
  5. Lightly grease the baking sheet. Pour out the dough crumbs and send to bake at 180 degrees.
  6. Keep in the oven until the dough turns golden.

We create the cream from butter and condensed milk at room temperature. Mix the ingredients thoroughly, preferably with a mixer.

When our loose "cake" has cooled down, grind it by hand or with a crush. Mix thoroughly with cream.

Put the sweet mass in a "hill". An option is to mold several separate cakes. The top is often doused with chocolate icing or melted dark chocolate bar.

It is imperative to keep the "Anthill" in the refrigerator for at least three to four hours. If it takes longer, even better.

The recipe has many variations. For example:

  • with chopped walnuts;
  • with the addition of eggs to the dough;
  • "Anthill" of shortbread cookies without baking. To do this, chopped baked goods (about 500 g) are mixed with cream, as in the recipe above, or only with a can of "boiled". "Fast", but very tasty cake!

Curd cheesecake with condensed milk: baked option

Cheesecakes became popular in our country not so long ago as "Anthill", and housewives have already invented many homemade recipes. For example, with condensed milk.

Ingredients:

  1. cottage cheese - 400 g
  2. condensed milk - one incomplete can
  3. eggs - 3 pcs.
  4. Mix cottage cheese, condensed milk and eggs. For flavor, you can add a little vanillin.
  5. Pour into a thinly oiled dish.
  6. Bake for 50-60 minutes at 180 degrees (or slightly more).

Cool the finished dessert a little. When the edges come away from the sides of the baking sheet, transfer to a board and divide into portions.

Curd cheesecake without baking

Products:

  • cottage cheese - 400-500 g
  • condensed milk - 1 can
  • butter - 100 g
  • instant gelatin - 1 pack (11 g)
  • boiled cold water - 0.6 cups
  • shortbread cookies - 250-300 g.

Prepare like this:

  1. In a deepened bowl or glass, pour the gelatin with water. Leave to swell.
  2. Then "dissolve" the mixture in a "water bath" with continuous stirring. It is important not to let the water boil. When all the gelatin has dissolved, set aside the solution to cool.
  3. Place the softened butter in a blender along with the biscuits and finely chop.
  4. Spread the resulting mixture evenly on the bottom of the split form and compact thoroughly. This will be the basis for the cheesecake.
  5. Beat cottage cheese with condensed milk and jelly solution until creamy. It is more convenient to do this with a blender.
  6. Put the curd mass on top of the crushed biscuits, flatten.

Leave the dessert in the refrigerator for 2-3 hours.

The dish is ready!

Tula gingerbread with condensed milk

Today, all you hear about gingerbread is that the sale "is not at all the same." Why not try to create a "real" one at home?

What you need for the test:

  • flour - 700 g
  • sugar - 200 g
  • egg - 2 pcs.
  • butter - 100 g.
  • honey - 3 tbsp. spoons
  • soda - 1 tsp

You will also need a tablespoon of cinnamon and some nutmeg.

For the filling, prepare a jar of boiled condensed milk. To make the glaze from a small amount of water and sugar. The usual proportion is 1: 2 or 3: 5, for example 3 tbsp. spoons of water and 5 tbsp. tablespoons (without a slide) of sugar.

Cooking process:

  1. Allow the butter to soften before kneading the dough. You should also prepare a "water bath" in a wide saucepan. Make the dough itself like this:
  2. Place sugar and honey in a convenient container. If the latter is hardened, it should be heated with sugar in a water bath (do not overheat!). The honey will become runny. Mash the butter with a fork and add to the mixture. Mix very well.
  3. Break eggs, add soda (quicklime). Interfere again.
  4. Heat the bowl with the mass in a "water bath". Keep for 8-10 minutes, stirring. The sugar will dissolve until the end, and the mixture of products will become homogeneous. Remove the dishes from the "bath".
  5. Gradually introduce sifted flour. Stir the dough after each serving. Add cinnamon and a pinch of nutmeg with flour. Make sure the dough is firm, but not tough.
  6. Knead the dough until it becomes elastic and no longer sticks to your hands.

Some housewives at this stage put the dough in the refrigerator for a couple of hours so that it is infused.

Before baking, divide the dough into quarters, roll each into a half-centimeter thick cake. Cover two layers with condensed milk - these will be the two bottom layers. Lay layers without filling on top of the gingerbread. Pinch the edges of the product carefully.

Bake on a baking sheet covered with parchment. The oven temperature is 200 degrees. The gingerbread will be ready in 15-20 minutes.

While the treat is in the oven, it's time to make the icing. Mix water and sugar and bring to a boil. Another option is to put the sweet mixture in a glass in the microwave for two minutes. Grease the top of the gingerbread with the resulting mixture immediately after removing it from the oven.
