With the onset of summer and hot days, many of us lose our appetite: still, the air heats up, our health worsens and an overheated body requires coolness, not food. However, completely abandoning food intake is a direct road to illness. What to cook on a summer day? Cold tomato soup!
It is necessary
- - tomatoes - 0.6 kg;
- - bell pepper - 1-2 pcs.;
- - onions - 1 pc.;
- - fresh cucumber - 1 pc.;
- - lemon - 1/2 pc.;
- - meat broth - 0.3 l;
- - vegetable oil - 2 tablespoons;
- - garlic - 2-3 cloves;
- - greens (parsley, dill, basil);
- - pepper;
- - salt.
Instructions
Step 1
Remove the seeds from the bell pepper, peel the onion and cut it into small pieces together with the tomatoes.
Step 2
Finely chop the garlic.
Step 3
Bake tomatoes, peppers, onions and garlic on a baking sheet, after sprinkling with vegetable oil.
Step 4
Peel the cucumber and lemon, cut into slices and crush slightly with a fork.
Step 5
Mix and grind all products with a blender, salt and pepper to your taste.
Step 6
Pour the mixture into a saucepan, pour over the broth and cook for 5 minutes.
Step 7
Sprinkle the cooled soup, poured into plates, with herbs. Sour cream and croutons can be served with the finished dish. The soup can also be eaten hot.
