beets - 2 pcs; - potatoes - 2 pcs; - quail eggs - 5 pcs; - water - 1 liter; - fresh cucumbers - 3 pcs; - sweet kvass - 100 g; - green onions, salt - to taste

Step 1
Wash the beets and, without peeling them, wrap them in foil and bake in the oven at 200 degrees. The approximate cooking time is 1 hour. Then refrigerate, peel and cut into cubes.
Step 2
Peel potatoes, cut into cubes and boil in 1.5 liters of water. Take it out, and put half of the chopped beets in the water, which you need to cook for half an hour over low heat. Cool the broth, strain, and discard the boiled beets.
Step 3
Mash the yolks of the boiled eggs with a little beetroot broth. Place the remaining beets, potatoes, crushed yolks, finely chopped green onions and cucumbers in a separate saucepan.
Step 4
Pour the strained broth over the vegetables, salt and pepper to taste, add cold kvass. Chill in refrigerators for 15-20 minutes and serve.
