Cut the beef into cubes, about 1 * 1 cm in size. Pour the meat with cold water and cook for about 1-1, 5 hours, constantly removing the foam.

Finely chop the onion and fry in a pan until golden brown, then add the tomato to it and simmer for about 5 minutes. The greens should be finely chopped. And cut the prunes and garlic into small pieces. Many housewives, on the contrary, cut prunes and garlic into large pieces. Consider your family's preferences. If the prunes are finely chopped, then they will not be felt in the soup, but will give it a special aroma.

When the meat is done, add the prunes to the pot and cook for 20 minutes over medium heat. Then place the rice in a saucepan and cook for about 15 minutes until tender. Then you should season the kharcho soup with adjika, khmeli-suneli, red and black ground peppers, garlic and herbs. Stir and cook for 5 minutes. Then turn off the heat and let the soup steep, covered, for 20 minutes.
