Step 1

Select a goose carcass. The ideal weight for preparing a juicy and appetizing dish is 3-4 kg. Take a close look at the goose. Feel the sides to see how meaty it is. Remember: meat can be considered fresh if it moves freely around the throat when touched by hands. Make sure the skin is clean and the breast is fleshy.

Step 2

Store the goose before cooking at a temperature no higher than +2 degrees, but no longer than 12 hours. If you want to keep the bird for about 2 months, freeze it in the refrigerator at -10 degrees.

Prepare a goose stuffed with sauerkraut. Wash the bird and pat dry using paper towels. Rub the goose with salt, pepper and spices to taste. Pierce it in several places with a sharp knife. Stuff with sauerkraut.

Prepare your apples. Wash them. Cut into 4 pieces, removing the core. Place them inside the goose. Sew up the carcass.
