The goose baked with apples is a real classic in poultry cooking. Such a dish always looks solemn, and it will decorate any festive table. The goose baked with apples with its aroma will whet the appetite of even the most fastidious guests.

- apples;
- 1.5 kg of potatoes;
- 200 g of onions;
- 4 black peppercorns;
- 50 g prunes;
- head of garlic;
- 50 g raisins;
- 3 tsp cumin;
- 300 ml of dry white wine;
- sea salt;
- pears;
- 1/2 tsp dried coriander;
- 50 g dried apricots.
Instructions
Step 1
Grind the cumin, salt, a pinch of coriander and black pepper in a mortar.
Step 2
Take a goose, gut it and cut off its wings. Cut off the wings so that the "shoulder" remains.
Step 3
Rub the outside of the poultry with the prepared spice mixture. Do not rub the inside, as the apples that will be inside will be cooked without spices and salt.
Step 4
Preheat oven to 220 degrees. Place the goose fat on the bottom of a refractory dish. Cookware should have high edges so that fat does not leak out when roasting poultry.
Step 5
Make the filling. Take five sour apples and cut them into cubes, then mix them with dried apricots, prunes and raisins. Pre-dried fruits can be soaked in aniseed vodka for thirty minutes, but this is not necessary.
Step 6
Stuff the goose with the mixture. Try not to fill the mixture too tightly inside, as it may not reach full readiness. Tie the legs of the goose with a nylon thread.
Step 7
Place the goose in the preheated oven and leave it there for 30 minutes. After the time has elapsed, remove it and pour over the melted fat.
Step 8
Send the goose back to the oven for thirty minutes. If it starts to burn, reduce the temperature to 180 degrees. After half an hour, take it out and, watering it with wine, return the goose back for the same time. Usually a goose about three kilograms should cook for at least three hours.
Step 9
In a dish with fat, place the onion, chopped into quarters, one clove of garlic and the potatoes, cut into two or four parts. Mix everything and place in the oven.
Step 10
Pierce the remaining apples and pears in several places with a fork and return to the oven.
