To please loved ones with delicious Ossetian pies with cheese and potatoes, prepare the ingredients for baking. For the dough, you will need half a liter of fresh milk, 700 g of flour, a tablespoon of sugar, a teaspoon of salt, 2 teaspoons of dry yeast, 3 tablespoons of vegetable oil. For the filling, prepare 1 kg of potatoes, 600 g of feta cheese and 100 g of butter.

Sift flour into a large saucepan, add dry yeast to it, stir. Then heat the milk over low heat to 30 ° C. Add sugar and salt to it, stir. Pour milk into flour and knead the dough, add vegetable oil to it and mix again. Cover the pot with a lid and leave in a warm place for 60 minutes.

Now, while the dough is coming up, start filling the pie. Peel and cut the potatoes into random pieces, cook until tender. Drain and make mashed potatoes with butter.

Grate the feta cheese on a coarse grater. Pour it into mashed potatoes and mix thoroughly. Now divide the resulting mass into three equal parts and roll a ball from each part with your hands.

Return to the dough: stir it with your hand in a circle, close the lid and let stand for another half hour in a warm place. After 30 minutes, when the dough comes up a second time, you can start forming the pies. Sprinkle flour on the cutting surface, separate a third part from the dough - 350 g. Put a piece of dough on a board or table and, adding a little flour (no more than a glass in total), knead it a little with your hands until it is will stick to your fingers.

Roll out the dough into a large tortilla and place one of the balls of filling in the center. Lift the edges of the flatbread and pinch the top of the dough so that the filling is not visible. Now shape the dough again into a tortilla, rolling it along with the filling inside.

Place baking paper in a baking sheet and sprinkle with flour. Place the flatbread on a baking sheet and pull it out so that it is no more than 1 cm thick. Make a small hole in the center of the flatbread so that steam escapes during baking.

Place the baking sheet in an oven preheated to 200 ° C. Bake for 25-30 minutes. Place the finished pie on a greased plate. Grease the surface of the pie also generously with butter. Form the remaining two cakes in the same way as the first and bake one by one.
