Kharcho soup is a Georgian dish. To prepare real kharcho, beef brisket is used, as in Georgian “kharcho” is beef soup. But some housewives cook broth from lamb brisket or chicken.

- beef brisket (500 g)
- two onions
- 3 cloves of garlic
- tomatoes (2 pieces)
- 1/3 cup rice
- 1/3 cup walnuts
- ½ cup sour plum or 2 tablespoons Tkemali sauce
- hops-suneli
Instructions
Step 1
Rinse the brisket under cold running water. Cut into chunks. Cover with cold water and put on high heat. When the meat boils, skim off the foam and reduce heat. Cook the meat until tender, about two hours.
Step 2
Chop the onion finely and fry in a preheated skillet until golden brown. Grind the nuts in a mortar or blender. Rinse the rice. Remove the brisket from the broth, separate the meat from the bones. Cut the meat into large pieces.
Step 3
Fold the fried onions, chopped nuts, chopped meat into the broth, add rice. Add pitted sour plum or Tkemali sauce. Cook for 20 minutes.
Step 4
Scald the tomatoes with boiling water and peel them. Cut into slices and lightly fry in vegetable oil or fat removed from the broth. Place the tomatoes in the soup 10 minutes before the end of cooking
Step 5
Add hops-suneli to the soup five minutes before cooking.
Add garlic passed through a press to the prepared soup, cover the soup with a lid and let it stand.
Sprinkle kharcho with fresh parsley or cilantro in a plate.
Step 6
Make chicken kharcho.
Chop the fatty chicken into pieces and cook for 45 minutes. Remove chicken from broth and transfer to saucepan. Add chopped onions, a little broth and simmer for 15 minutes. With constant stirring, add one tablespoon of flour and simmer for another 10 minutes.
Step 7
Boil tomatoes and sour plums in water. Rub them through a sieve. Grind the walnuts in a mortar. Fold the plum and tomato puree, stewed chicken, nuts, and garlic into the broth. Add suneli hops and cook for 10 minutes. Sprinkle the prepared soup with herbs.
