It is necessary
- For Easter cake:
- flour - 350 gr
- kefir - 300 ml
- raisins - 100 gr
- butter - 100 gr
- sugar - 150 gr
- soda - 1 tsp or 4 tsp. baking powder
- confectionery sprinkles or candied fruits
- zest of 1 lemon
- For glaze:
- icing sugar - 100 gr
- butter - 2 tablespoons
- lemon juice - 3 tablespoons
Instructions
Step 1
Sift flour to make the cake fluffy. You can take whole-ground and premium flour 50/50.
Step 2
Rinse the raisins thoroughly. Add a teaspoon of baking soda or baking powder to kefir heated to room temperature (this is important!), Stir.
Step 3
Combine sugar with butter (or ghee) and 1 lemon zest. Whisk.
Step 4
Combine all prepared ingredients. You do not need to knead the dough. To make the cake a success, just stir so that there are no lumps.
Step 5
Grease the cake pan with butter. Fill the form 2/3 or half full of cooked dough. Depending on what kind of cake you would like. If it is flat, then half, if with a raised top, then 2/3 of the shape.
Step 6
Preheat oven 160-180 degrees. Place the cake pan into an already preheated oven. Bake 40 minutes until tender. Readiness can be checked with a dry skewer. Pierce the center of the cake with a skewer and remove it. If the cake is ready, the skewer must be dry.
Step 7
When the cake is ready, make a sweet icing. Combine the icing sugar, butter and lemon juice. Bring to a boil over medium heat. Cool and spread on the finished cake. Decorate the top with confectionery powder or candied fruits.
