Easter cake is one of the main symbols of Easter. Along with traditional cooking recipes, you can try to bake an unusual cake without the use of yeast, which will surprise the most discerning guest.

- - cream 10-20% fat - 150 ml
- - flour - 300 g
- - eggs - 4 pcs.
- - raisins - 100g
- - lemon juice - 3 tablespoons
- - cream cheese (ricotta, mascarpone) - 420 g
- - lemon zest from 1 lemon
- - baking powder -1 tsp
- - cognac - 1 tbsp.
- - icing sugar - 450 g
- - white chocolate - 75 g
- - vanilla - 1 g
- - candied fruits or colored sprinkles for decoration
Instructions
Step 1
Mash the cream cheese and add 2/3 of the cream to it. Whisk everything.
Step 2
Pour the remaining cream into a saucepan, add chocolate. Heat until the chocolate is completely dissolved.
Step 3
Pour cognac and melted chocolate into the creamy cheese mixture, add vanilla.
Step 4
In a separate bowl, beat the eggs until they double in volume, gradually add 250 g of powdered sugar.
Step 5
Add the cheese mixture to the egg mixture, beat the resulting mixture and put the lemon zest.
Step 6
Combine the flour with baking powder and gradually add it to the liquid mixture. The resulting mass should be drained from the spoon with a tape.
Step 7
Add the raisins to the dough.
Step 8
Grease a baking dish with oil. Divide the dough into 2/3 of the pan. Bake in the oven at 180 degrees for about 50 minutes.
Step 9
While the cake is baking, prepare the icing: mix 200 g of powdered sugar with lemon juice.
Step 10
Pour the finished cake with icing and decorate with colored sprinkles or candied fruits.
