It is a well-known fact that when preparing a real Russian kulebyaki, each layer of the filling was covered with a well-baked pancake. The presented recipe for making kulebyaki with minor changes. Perfect for a family dinner. For the preparation of the dish, rye flour is traditionally used, which can be replaced with wheat flour.

- • Granulated sugar - 45 g
- • Beaten eggs - 2 pcs
- • Peasant oil - 100 g
- • Salt - 3 tsp.
- • Garlic - 3 cloves
- • Vegetable oil - 3 tbsp.
- • Medium tomatoes - 3 pieces
- • Onions - 2 pieces
- • Oregano - 1 tbsp.
- • Boiled spinach - 450 g
- • Ricotta - 175 g
- • Large eggplant;
- • Champignons - 100 g
- • Rice - 225 g
- • Ground nutmeg - 1/2 tsp.
Instructions
Step 1
First of all, you need to prepare a dough. To do this, you need to mix 2 tbsp. spoons of warm water, yeast and a little sugar. Put the dough in a warm place for 30 minutes.
Step 2
Mix sifted flour, granulated sugar, salt.
Step 3
Add eggs, dough and melted butter. Knead the dough. It should be very elastic.
Step 4
Then the fillings are prepared in layers. To prepare the tomato layer, fry the onion and garlic in oil, add finely chopped tomatoes and simmer.
Step 5
A layer of spinach is prepared as follows: chop the boiled leaves and mix with the risotto, add salt, pepper and nuts.
Step 6
A layer of mushrooms can be prepared as follows: fry the onion, put the eggplant and simmer until tender. Then grind in a blender. Transfer the eggplants and chopped mushrooms to the pan. Everything is cooked until tender, salt and pepper.
Step 7
Rice layer: cook rice until tender with 50 gr. butter.
Step 8
Roll out the dough and put in a mold. Put the filling in layers: rice, tomato, spinach, mushrooms and again rice.
Step 9
Connect the edges, moisten with milk and put in the oven for 1 hour.
Step 10
After half an hour, the kulebyak should be covered with foil and baked until tender.
The finished dish can be served hot or cold.
