- - ginger root - a piece the size of a clove of garlic;

- - dried thyme - 1 sachet;
- - dorado fish - 2 pcs.
Instructions
Step 1
Brush the dorado fish. Remove the gills from her, gut and rinse thoroughly from the inside with water. Do not remove soft fins, tail and head. Make 4 cuts on the carcass, salt on the inside and outside.

Now prepare the rubbing mixture inside. Finely chop the ginger root, mix it with two teaspoons of dried thyme, drip a few drops of lemon juice. Stir everything well, making a thick mass as a result. Rub the inside of the fish thoroughly with the resulting mass.

Next, go for the fish filling. Peel the lemon and chop it finely and mix with the finely chopped olives. Stuff the dorado fish with this mixture. Try to stuff in moderation so that the fish filling does not fall out and deform.
Step 4
To make the external rub mixture, combine 3 teaspoons of dried thyme, a pinch of salt, and two tablespoons of olive oil. Squeeze the juice from half a lemon. Mix everything thoroughly and rub the outside of the fish.
Step 5
Grease a baking sheet with olive oil, place the fish on it and place in a preheated oven. Bake at 190oC for 25 minutes. After that, dorado with thyme can be considered ready, serve it hot or warm.
