This dish is most often prepared in Andijan, Fergana, Tashkent, Khorezm regions. The peculiarity of this type of shurpa is that meat and vegetables are fried together.

900 g lamb or beef -60 g vegetable oil or animal fat -150 g onions -400 g carrots -200 g fresh tomatoes -1200 g potatoes or turnips -30 g herbs -spices and salt to taste
Instructions
Step 1
Heat vegetable oil or animal fat vigorously until smoke is generated. Add chopped meat into small pieces and fry until brown.
Step 2
Cut the onions into rings, fry until golden brown.
Step 3
Cut the carrots into large slices, fry them and add the tomatoes.
Step 4
Pour fried foods with water, bring to a boil, add spices. Simmer for 10 minutes.
Step 5
Cut the potatoes into 4 pieces and send them to the cauldron. Season with salt and pepper.
