A dish for those who are tired of dumplings, and Italian ravioli is an alternative to the Russian dish.
It is necessary
- Dough:
- - 300 g flour;
- - 3 eggs;
- - 1 tbsp. a spoonful of vegetable oil;
- - salt to taste.
- Filling:
- - 1 clove of garlic;
- - one onion;
- - celery stalk;
- - 250 g chicken fillet;
- - medium tomato;
- - 15 g of basil;
- - an egg;
- - 75 g parmesan cheese;
- - 50 g butter;
- - 6 tbsp. tablespoons of olive oil - 6 tbsp. spoons;
- - 1 tbsp. a spoonful of sherry;
- - 0.5 tsp of ground red pepper;
- - salt to taste.
Instructions
Step 1
Crush the garlic. Finely chop the chicken, onion, celery and basil. Peel the tomato. To do this, make a cross-shaped incision and place in boiling water for 30 seconds. Drain, cool the tomato and gently peel off the skin. Grate Parmesan.
Step 2
Sift flour and salt. Add butter, eggs and knead to an elastic dough. Cover it with a towel and let it sit for 15 minutes.
Step 3
Pour 2 tbsp. tablespoons of oil and sauté the garlic, onion and celery until tender. Then add the chicken and fry until brown, stirring constantly.
Step 4
Add sherry and tomato to the cooked mixture. Transfer to a bowl to cool. Then add the basil, egg, ground pepper and half of the cheese. Season with salt and pepper.
Step 5
Divide the finished dough into three parts. Roll out each piece and cut into two pieces. Place the filling 4 cm apart on one half and cover with the other half of the dough.
Step 6
Press down on the dough and cut into squares. Glue the edges with your fingers, and let sit for 15 minutes. Bring the water to a boil in a saucepan and cook the ravioli for 5-8 minutes. Drain the water. Pour melted butter over the ravioli. Sprinkle with cheese.
