If the legumes are not the first freshness, it is better to increase the time. In a few hours, the chickpeas will be saturated with moisture and become softer. This will not only shorten the cooking time, but also improve the taste. If you are using canned chickpeas, simply drain the liquid. Rinse product if necessary.
Use cold water to soak. Many people mistakenly pour hot, hoping to speed up the process of boiling chickpeas. The high temperature promotes protein folding, which is an obstacle to water penetration.
To prepare the pate, it is important that the chickpeas are well boiled. Here's a little trick - add a pinch of baking soda to the water before soaking.
Second step
Chop the garlic and parsley. Instead of the latter, you can use cilantro or green onions.
Third step
Puree the chickpeas in a blender. You can bring it to a completely homogeneous texture or leave small pieces - it depends on personal preference.
Fourth step
