Fresh basil, butter and cream add a rich flavor to this tomato soup. If you replace at least one of the listed ingredients with anything, this particular soup will no longer work.

- - 4 tomatoes;
- - 4 glasses of tomato juice;
- - 1 glass of heavy cream;
- - 100 g of butter;
- - 14 fresh basil leaves;
- - a pinch of salt, pepper.

Step 1
It takes 10 minutes to prepare for cooking, the soup itself takes 35 minutes. This is a quick option for a hearty first course for lunch or dinner.
Step 2
First, scald fresh tomatoes with boiling water to easily remove the skin from them, remove the seeds from the tomatoes, cut the pulp into small cubes. Place tomatoes and tomato juice (you can even take a purchased one) in a saucepan, put on medium heat. Cook, stirring occasionally, for 30 minutes. Grind the resulting tomato mixture with a blender or in a food processor along with fresh basil leaves, return the resulting puree to the pan.
Step 3
Add heavy cream (at least 30% fat), 100 g butter to the tomato puree in a saucepan. Simmer over medium heat. Season with pepper and salt to your liking. Heat the soup until the butter is completely dissolved. Just don't boil the tomato cream soup with basil!
Step 4
Pour the finished soup into soup bowls, it is better to serve it slightly warm, you can decorate it with a sprig of fresh herbs on top. Cold soup is no longer so tasty, in addition, it does not store for a long time even in the refrigerator, so prepare a saucepan of soup directly for dinner or lunch so that you can consume it all at one time.
