Cheesecakes are one of the most popular cottage cheese dishes. Syrniki are prepared in the form of pancakes and served, as a rule, with sour cream. You can add a little raisins, apples, carrots or dried apricots to the dough. Sometimes the recipe requires baking curd cakes in the oven, but the classic version involves frying in roasted oil. The cooking process is quite simple and does not require any special skills.

It is necessary

    • 500 g cottage cheese
    • 200 g flour
    • 50 g sour cream
    • 50 g raisins
    • 2 eggs
    • 3 tbsp. tablespoons of sugar
    • ½ teaspoon of baking soda
    • ½ teaspoon citric acid
    • a pinch of salt
    • vegetable oil for frying

Instructions

Step 1

Pour the raisins with hot water and leave for 15-20 minutes. Better to take good quality raisins. If the raisins are fresh enough, then there is no need to soak them, but just douse them with hot water.

Step 2

Rub the cottage cheese twice through a sieve. The more fat you take cottage cheese, the juicier and tastier the cheesecakes will turn out. If the cottage cheese is too wet, then it should be squeezed out by placing it in cheesecloth and hanging for 1-2 hours.

Step 3

Beat eggs lightly. You can take only the yolks, this will only give the cheese pancakes more pomp, improve their color and taste.

Step 4

Sift the flour through a sieve and divide into 2 equal parts. Leave one of the pieces for the cheese pancakes. The flour must be sieved not only to get rid of possible lumps, but also in order to saturate it with oxygen. Sifted, oxygenated flour makes the product more luxuriant and airy.

Step 5

Add the second part of flour, sour cream, raisins, sugar, salt, soda and citric acid to the curd. Soda and citric acid are the most versatile leavening agents for any dough. You can safely replace citric acid with an equal amount of fresh lemon juice, or 9% vinegar. Likewise, you can use ready-made baking powder for the dough instead of the indicated ingredients.

Step 6

Combine all ingredients and knead the dough until smooth and elastic. Leave the dough, covered with a towel or cling film, for 30-40 minutes to proof.

Step 7

Use a heavy-bottomed skillet for frying. Heat the oil and skillet well before frying. You can take a cast iron pan. Add a lot of oil, but not as much as for deep fat.

Step 8

Divide the dough by the number of cheesecakes. Form into small balls and breaded in flour. This will allow a beautiful crust to form, leaving the cheese pancakes juicy inside, and will prevent the pancakes from sticking to the bottom of the pan.

Step 9

Fry the pancakes on both sides over medium heat until a beautiful golden brown. Turning the product over with a spatula to the other side, you can cover the pan with a lid and darken the syrniki for several minutes.

Step 10

Serve ready-made hot syrniki with milk, sour cream and jam.
