Cutlets can be made from almost any fish. Rinse it under running water, remove scales and entrails, cut off the head and tail. Make a cut along the entire back and divide the carcass in two. Finely chop the fish fillet with a knife or use kitchen appliances: chop with a blender or a meat grinder with a large grid. The pieces should not turn out to be very small or like gruel, so the cutlets will not fall apart during frying and retain the taste of the fish.

Usually minced fish is thinner than meat. Squeeze the minced meat lightly to get rid of excess liquid. When chopping fillets in a meat grinder or blender, add a white loaf soaked in milk, and when slicing with a knife, add bread crumbs for the same purpose.

Add the remaining ingredients to the minced meat - salt, your favorite spices. Use semolina instead of flour for tenderness. Peel the onions, chop finely and add to the minced meat for juiciness - the drier the fish, the more onions you put. Let it brew for half an hour.

Moisten your hands with water, shape the patties, putting a small piece of butter in the middle. This will add juiciness to the cutlets when frying. Dip the breadcrumbs, for this use semolina or breadcrumbs, and set them aside to "rest".

Step 6

Heat any vegetable oil in a skillet. Dip the patties in the breadcrumbs again to get a crispy crust on the patties, and place them in the skillet.

Step 7

The fish cooks quickly, so as soon as the patties are browned on both sides, place them on a plate. You can choose a side dish for fish cakes to your taste: rice, pasta, potatoes, vegetables.
