    • carrots 1 piece
    • vegetable oil 5 ml
    • flour 1 tablespoon
    • brazier
    • oven
    • large saucepan.

Instructions

Step 1

To cook a rabbit in wine, take a rabbit carcass and rinse it under cold running water. Peel off offal and set aside. Rub the insides of the carcass thoroughly with salt, and rub salt on top of the rabbit. It is best to use sea coarse spice for this purpose.

Step 2

Take out the enamel saucepan and pour the wine into it, add a spoonful of cream and stir. Then put a sprig of rosemary in there and set aside. Place the rabbit on a cutting board and cut into equal pieces with a sharp knife. You can cook the rabbit whole if the size of the dish allows. After that, the rabbit meat must be folded into a saucepan so that the wine marinade covers it completely.

Step 3

Place the pot on a bitch in a cool, dry place. Prepare the spices at this time. Grind black peppercorns in a mortar or coffee grinder and mix with marjoram. To properly bake a rabbit in wine, you need to add all the spices at least a couple of hours before starting the cooking process.

Step 4

Peel the onions and cut them into small cubes, the finer you cut them, the better. Divide the head of garlic into cloves and peel each one. You don't need to chop the garlic, just crush it with a knife on a cutting board or grate it on a fine grater.

Step 5

Pour some vegetable oil into a roasting pan, put the garlic in there and fry it over medium heat for five minutes. Then take out the marinated meat and place the pieces in the mold. It is recommended to use a heavy-bottomed cast iron pan, but you can cook in a regular one. Fry the rabbit in wine until a crust appears, add sour cream. Simmer for another 10-15 minutes.

Step 6

Rinse the tomatoes, scald them with boiling water and peel them. Cut vegetables into small cubes and add to the bunny pot. Pour in here? liters of clean water, cover and simmer over low heat for 40 minutes.

Step 7

Drain the marinade into a separate container; you can use a bowl or small skillet. Add a tablespoon of flour and stir. You can add 15 g of butter to taste. Cool the resulting sauce to room temperature.

Step 8

Heat the oven to a temperature of 200 degrees and put a pan with a rabbit there. Bring to readiness within 1 hour. When the meat is ready, bones are easily separated from it.

Step 9

Then remove the meat from the oven and put it on a large platter, serve with a garnish of fresh vegetables and rice. The rabbit should be eaten with the resulting wine sauce. This recipe for baking a rabbit in wine is appropriate not only on a festive table, but also during a family dinner on weekdays.
